Sinigang na Baboy. This rich and hearty Filipino stew is famous for its assertive sour and savory flavor profile and features tender chunks of pork in a sour broth with tamarind and calamansi (a type of citrus) juice. I found it a little too sour for most palates and will have to tone it down a little. Served with roasted green beans, daikon radish slices, sliced scallions, and fried garlic.
